Bulk Black Elderberry Extract and Fruit Powder for Supplement Manufacturing
Black elderberry extract is a dark violet powder made from the ripe fruit of Sambucus nigra L., the European elder. Its color comes from anthocyanins, mainly cyanidin glycosides. You can order it as extract or as dried, milled fruit powder. We supply both forms in bulk to supplement brands, contract manufacturers, and formulators. You can request testing documents and samples on the quote form.
A dark berry ingredient you can specify by species, form, and fingerprint
Elderberry is a widely traded fruit ingredient in the supplement market. Buyers can define it by species, form, and anthocyanin profile. That makes supplier comparison and lot approval easier.
Named species
Most commercial supply is European elder, Sambucus nigra. American elder, Sambucus canadensis, is traded too, and USP has recommended separate standards for the two, so your specification should name one.
A clear anthocyanin fingerprint
Three cyanidin glycosides make up more than 98% of the anthocyanins in elderberry. An HPLC profile that shows this pattern is the clearest identity check.
Forms that are not interchangeable
Fruit powder is whole dried berry, milled. Juice powder is dried juice and may include a carrier. Extract is concentrated, either by ratio, such as 4:1, or to a stated anthocyanin level.
Deep natural color
Elderberry gives dark purple to red tones. Anthocyanin color shifts with pH, reading redder in acidic mixes and bluer as pH rises, so test color in your own base.
Ripe fruit
Buyers specify ripe berries. Unripe fruit holds more sambunigrin, a natural cyanogenic glycoside whose level falls as the berries ripen.
Familiar berry taste
Expect a tart, dark berry flavor. Extract and juice powders disperse in water for drink mixes, gummies, and syrups, while fruit powder carries skin and seed particles.
Where formulators use elderberry extract and fruit powder
Elderberry fits a wide range of measured supplement formats, including:
- Capsules
- Compressed tablets
- Gummies, after color and stability trials
- Syrups and liquid concentrates
- Powdered drink mixes
- Stick packs and sachets
- Lozenges and chewables
- Tea blends (fruit powder)
- Multiple ingredient botanical blends
- Private label programs
Plan fill weights from the form and assay on each COA. A 4:1 extract, a juice powder, and a fruit powder are not interchangeable gram for gram. Recalculate your serving math whenever you change form or supplier.
What to check before you buy elderberry
Powders sold as elderberry can differ in species, form, carrier, and anthocyanin profile. Review these points together, and ask for lot documents before you approve a supplier.
Species and plant part
Confirm Sambucus nigra L. ripe fruit on both the specification and the certificate of analysis (COA). If you buy American elder, the COA should name Sambucus canadensis instead.
Identity by HPLC and HPTLC
Ask for an HPLC anthocyanin profile and an HPTLC fingerprint against an elderberry reference. Cyanidin glycosides should dominate, and anthocyanins elderberry does not contain, such as peonidin glycosides, should be absent.
Assay method
Total anthocyanins by the pH differential method (a UV test) and individual anthocyanins by HPLC give different numbers. Compare grades only within one method, and ask which one your COA uses.
Form, ratio, and carrier
Confirm whether the lot is fruit powder, juice powder, or extract. For extracts, ask for the native ratio, the solvent, and any carrier, such as maltodextrin, with its percentage.
Ripeness and processing
Ask for a statement that the berries were harvested ripe, with stems and leaves removed. Ask how the fruit was extracted and dried, including temperatures.
Contaminant limits
Check heavy metals by ICP-MS, microbial limits by USP methods, pesticide residues, and residual solvents for ethanol extracts. Compare each limit with your own finished product specification.
Price check: Genuine elderberry extract has a cost floor set by the fruit harvest. A high anthocyanin grade offered far below the market price calls for a full identity panel before you approve it.
Typical specification for black elderberry extract
These values reflect a common water or water and ethanol extract, with fruit powder noted where it differs. Final figures come from the specification sheet and COA for your lot. NLT means not less than, and NMT means not more than.

Quality standards for elderberry extract and powder
USP now publishes a family of European elder berry monographs, one for each form. They measure anthocyanins by HPLC as named cyanidin glycosides, which gives buyers a shared yardstick.
USP European Elder Berry Dry Extract
This monograph first became official on March 1, 2019. It covers fresh or frozen ripe Sambucus nigra fruit, extracted with alcohol or water and purified on an adsorbent resin. The current text requires NLT 15% total anthocyanosides by HPLC, within 90.0 to 110.0% of the labeled amount.
Four named anthocyanins
USP counts total anthocyanosides as the sum of four cyanidin glycosides, read as chloride salts. Free cyanidin, the pigment core without its sugar, is capped at NMT 0.2%.
One monograph per form
USP has added or proposed separate monographs for the aqueous dry extract, powder, dry juice, juice concentrate, and liquid extract. The aqueous dry extract is made with water, ultrafiltration, and spray drying, and must hold NLT 14% total anthocyanosides. Several of these texts add HPLC profiles of fruit acids and of fructose and dextrose.
Why the method matters
The pH differential method reads total monomeric anthocyanins from the color change between pH 1.0 and 4.5. It is quick, and its AOAC collaborative trial showed reproducibility of 2.7 to 10.1% RSD. It cannot show which anthocyanins are present, so USP experts judged color based totals not specific enough for compendial use.
Identity and authenticity
Pair an HPLC anthocyanin profile with an HPTLC fingerprint against an elder berry reference. BAPP, the botanical adulterants program run by ABC, AHP, and NCNPR, released an elder berry laboratory guidance document in September 2026. It reviews 22 lab methods, including DNA methods and microscopic examination.
Contaminant limits to build on
USP <2232> sets component limits of 0.5 µg/g for lead and cadmium and 1.5 µg/g for inorganic arsenic and total mercury. These assume products taken at up to 10 g a day. Smaller daily amounts can meet the chapter's daily limits at higher per gram levels. One EU distributor's extract sheet also sets aflatoxin B1 at max 2 µg/kg and total aflatoxins at max 4 µg/kg.
Sourcing and processing practices for elderberry
Elderberry quality depends on ripeness at harvest, how fast the fruit is processed, and how the extract is purified. These practices give QA teams specific points to ask about and verify.
Harvest ripe fruit and remove green parts
Cyanogenic glycosides fall as the berries ripen, while anthocyanins peak in ripe fruit. Berries hold less of these glycosides than elder leaves and flowers, so leaves and other green parts should be sorted out before processing. Ask for a ripeness and sorting statement for each lot.
Freeze or process fresh
USP defines the starting material as fresh or frozen ripe fruit. Anthocyanins break down with heat and time, so ask how long the fruit waited between harvest and freezing or pressing. Supplier sheets list harvest from August to October.
Know the purification route
Resin purified extracts are specified at NLT 15% anthocyanins and are eluted with water and alcohol. Membrane filtered extracts, made with water alone, are specified at NLT 14%. Juice powders and simple ratio extracts carry far less, so the route sets the grade.
Check origin and species together
Most supply is European Sambucus nigra, and some suppliers specify one cultivar, such as Haschberg, grown in Austria. USP experts have listed Sambucus williamsii as a related species to screen for. Ask for species identity and the country of harvest on every lot.
Name the carrier
USP allows suitable carriers in dry extracts, and spray dried grades often contain maltodextrin. One extract sheet lists about 10% maltodextrin with 90% extract. Ask for the carrier name and percentage, since both go on your label and change the assay math.
Ask how microbes were controlled
Some extract sheets state sterilization by high temperature and pressure, with no ethylene oxide and no irradiation. Some fruit powder sheets allow total counts up to 100,000 cfu/g, ten times the extract figure in the spec table. Ask for the method used and keep the statement in the lot file.
Formulator tips for elderberry
Use these points when you set label amounts, fill weights, and incoming tests. Most figures below come from USP monographs and published supplier sheets.
- Keep one method from spec to finished product. A pH differential total is read as cyanidin-3-glucoside equivalents, while the USP HPLC total adds up four named compounds.
- Add elderberry late in hot processes. In one heating trial, an elderberry color extract kept 63.8% of its absorbance at 535 nm after 6 hours at 90 °C.
- Spray dried juice powders and extracts turn sticky as they pick up moisture. Silica gave better flow and less clumping in one spray drying trial, so test a flow aid in your blend.
- Count the fruit sugars. Juice powders and concentrates carry fructose and dextrose, which USP methods measure, so include them in gummy solids and on the Supplement Facts panel.
- Recalculate fill weight when you change grades. A 5% grade with 10% maltodextrin and a 15% resin grade differ threefold in assay.
- Plan fill from bulk density. One extract sheet gives 0.30 to 0.70 g/mL, so 500 mg needs about 0.7 to 1.7 mL of fill volume.
- Set an incoming test plan. Run HPLC anthocyanins and HPTLC identity on every lot. Add aflatoxins, pesticides, and a sambunigrin test for each new supplier and at set intervals.
Helping shoppers read an elderberry label
Brands and their customer service teams field the same label questions again and again. These answers stick to what the ingredient is and how it is labeled.
What the label line means
A typical line reads black elderberry extract (Sambucus nigra) (fruit). The Latin name tells the shopper which elder was used: European elder is S. nigra, and American elder is S. canadensis. The plant part should read fruit or berry.
How to read an anthocyanin figure
Multiply the extract amount by the percentage: 200 mg at 15% gives 30 mg of anthocyanins. A note such as "by HPLC" tells you how the figure was measured. A ratio such as 4:1 means about 4 parts of fruit went into each part of extract.
Independent quality programs
Programs such as the USP Dietary Supplement Verification Program and NSF/ANSI 173 certification check finished products against their labels and contaminant limits. Brands can also cite the USP elder berry monographs in their own specifications.
Normal look, taste, and home storage
Extract and juice powders run dark red to violet and taste tart and fruity. Color can shift a little between lots and with pH, which is normal for fruit pigments. Keep the bottle closed in a cool, dry place away from light and heat.
Storage and handling for bulk elderberry
Fruit extracts and juice powders keep well when they stay sealed, cool, and dry. These habits help you hold color and assay across several production runs.
Keep it sealed
Extract and juice powders pick up moisture quickly and can cake or harden when left open. Close the inner liner after each use and press out the air.
Store cool and dry
Keep bags off the floor in a dry room, away from heat sources. Follow the temperature range on the spec sheet.
Keep away from light
Anthocyanins fade with light and heat over time. Leave the powder in its original opaque packaging.
Rotate stock
Record the lot number and retest date for each bag. Send older lots to production first.
Elderberry buyer FAQ
Quick answers to the questions procurement and quality teams ask most.
What is the difference between elderberry fruit powder, juice powder, and extract?
Fruit powder is whole dried berry, milled; juice powder is dried juice; extract is concentrated by ratio or to an anthocyanin level. Each has a different color intensity, taste, and solubility. Name the form on your purchase order and check it on the COA.
What is elderberry extract standardized to?
Elderberry extract is standardized either by ratio, such as 4:1, or to a percentage of anthocyanins. An anthocyanin figure means little without its method, so ask whether it comes from HPLC or the pH differential method.
How do you confirm a powder is really elderberry?
Identity is confirmed with an HPLC anthocyanin profile and an HPTLC fingerprint against an elderberry reference. In elderberry, three cyanidin glycosides make up more than 98% of the anthocyanins, so a different pattern calls for a closer look.
Is American elderberry the same as European elderberry?
No. European elder is Sambucus nigra and American elder is Sambucus canadensis, and their chemical profiles differ. USP has recommended separate standards for each, so name the species in your specification.
Why does ripeness matter for elderberries?
Unripe elderberries contain more sambunigrin, a natural cyanogenic glycoside whose level falls as the fruit ripens. Buyers therefore specify ripe fruit and ask how it was processed.
Does elderberry extract contain a carrier?
Some extracts and many juice powders do. A carrier such as maltodextrin helps the liquid dry into a free flowing powder, so ask for the carrier name and percentage.
Is there a USP monograph for elderberry extract?
Yes. USP made a European Elder Berry Dry Extract monograph official on March 1, 2019, and has since added or proposed monographs for other forms. The current dry extract text requires NLT 15% total anthocyanosides by HPLC, counted as four cyanidin glycosides.
How much extract do I need for a 15 mg anthocyanin label amount?
You need 100 mg of a 15% grade, before any overage. Divide the label amount by the assay: 15 mg divided by 0.15 equals 100 mg. A 4% grade needs 375 mg, and the method behind each figure must match your finished product test.
What documents can I get with an order?
A certificate of analysis (COA) and a specification sheet ship with every order. An allergen statement and a safety data sheet may also be available, depending on the lot in inventory. Contact us to request them.
